John Dory in Brown Butter and Pan Seared Brussel Sprouts

Sometimes I just want a simple fast meal, and this super easy John Dory meal is perfect for that. For the Brussel sprouts just pan sear in olive oil covered for ten minutes then turn over and do the same for the other side. Top with fresh Parmesan. The John Dory is just as simple. Just heat butter in a pan and cook the fish for five minutes on one side and five in the other while covered. Take fillets out and add a tablespoon more butter, melt and pour over fish. Sprinkle with salt. Done.
