Mulligatawny Soup

I have been wanting to make this dish for a while now. I combined parts of a few different recipes I found and this is what came out. I'd give it an A for sure!

1 cup red Daal (masoor)
1 cup celery chopped
1 onion chopped
1 tomato chopped
2 carrots peeled and chopped
1 tablespoon fresh chopped garlic
1 teaspoon of cumin
1 teaspoon of turmeric
1 teaspoon of curry powder
1/2 teaspoon of dried coriander
1/2 teaspoon of garam masala
1/2 teaspoon of ground cinnamon
1 teaspoon fresh chopped ginger
2 cloves
2 bay leaves
2 pods of cardamom
6 cups chicken stock
Sea salt to taste

Sautée onion, celery, for a few minutes in oil until slightly soft. Next add tomato, garlic and ginger-- cook for a few minutes. Add Daal and all the spices, Sautée for a minute then add chicken stock. Bring to a boil then reduce and simmer for 40 minutes. Once lentils are soft, take out bay leaves, cardamom, cloves and blend in a blender or with a hand blender until smooth. Add 1 cup of coconut milk and mix until its to temperature. Serve with basmati rice and garnish with cilantro and green onion.

Lobster Roll

I have never had a lobster roll before, but I can tell you that I dream of eating them. The look so, so-- so freaking good. Since there none around me, I had to make one. I checked a few recipes and realized the bread was of utmost importance. There is a special bread roll, but I could not find one here so I settled on a homemade hotdog bun for my grocer. My grocery also steamed and cracked a fresh lobster for me. I then split the rolls, buttered them and turned them butter side down in a pan until they were crispy. I took the freshly steamed lobster, chopped it, added a bit of melted butter and let it sit for a minute. Then I added mayo, salt and pepper. I let chill for a minute, then stuffed the rolls and garnished with green onion. So good!

John Dory in Brown Butter and Pan Seared Brussel Sprouts

Sometimes I just want a simple fast meal, and this super easy John Dory meal is perfect for that. For the Brussel sprouts just pan sear in olive oil covered for ten minutes then turn over and do the same for the other side. Top with fresh Parmesan. The John Dory is just as simple. Just heat butter in a pan and cook the fish for five minutes on one side and five in the other while covered. Take fillets out and add a tablespoon more butter, melt and pour over fish. Sprinkle with salt. Done.
