Fried Eggs over White Wine Mushrooms

Who doesn't love eggs? I do, I do! Here is a quick easy recipe that will add some flavor to your breakfast. Sautée baby Bella mushrooms in butter and olive oil. Once they have softened up add 1/2 cup of your favorite whit wine. Cooke out all the wine then add sea salt, pepper, a pat of butter and on clove of garlic crushed. Cook for a few more minutes and put over buttered toast or am English muffin. Top with an over easy egg, chive and a little cheese. Delish!
