For this Yummy sandwich I put deli roasted chicken, mahon cheese
(http://www.artisanalcheese.com/prodinfo.asp?number=10327), a little mayo and fresh organic smashed avocado. I love avocado on a sandwich -- I am sure you can tell. Get a pan warm and add in a pat of butter. Once it is melted put the sandwich in and coat one side with butter, then flip over. Lift sandwich and sprinkle shredded cheese down-- put the sandwich back on where the cheese is. Let this side brown then flip and brown the other side. This sandwich is fab!

Take whole wheat tortillas and put them in the oven on broil. Once one side is crisp, flip over and let the other side crisp. Add your favorite pizza sauce, I used 360 organic. Next put on whatever cheese you like. For this one I put on a mixed shredded cheese blend and fresh mozzarella. Both pizzas have corn ( I used frozen thawed in micro) and red onions. One pizza has deli pancetta and stawberries and the other has deli sliced chicken and jalapenos. Once you top the pizzas put them in the oven on bake for 12 minutes or until cheese is melted. Easy Cheesy!

Madeira Mushroom Chicken, Wild Rice and Strawberry Tomato Salad with Balsamic Glaze




This recipe is pretty simple. Dredge three chicken breasts in seasoned flower. I used salt, pepper, red pepper and garlic powder. Brown in a pan with 1 tablespoon of butter and olive oil. Take out and put in a Pyrex dish. In the same pan sautee a package of mushrooms (baby bella works well) and put over the chicken breasts. In a bowl mix a can of cream of mushroom soup with 1/2 can Madeira wine, 1 tablespoon of garlic, salt, pepper, a 1/4 tablespoon of thyme and 1/4 tablespoon of poultry seasoning. Pour over chicken and cook for 1.5 hours on 350. Serve with rice or mashed potatoes.

Cut strawberry and cherry tomatoes, salt and pepper, then drizzle with balsamic glaze.

Simple recipe. Use Rotisserie Chicken. Cut chicken up and put in whole wheat tortillas with avocado and white cheese (I used pepper jack). Roll up and envelope side down put in a dry pan. Heat until one side is brown, then flip and do the other side. For the salad I used romaine hearts and carrots. To make a vinegarette out of the ranch just dilute it with some kind of vinegar. I used the juice from pickled jalepenos. Doing this cuts down in the amount of fat in the dressing.

Pan sear a good chicken sausage. Applegate farm Organic roasted red pepper chicken sausage is what I had. I used about 1/3 a cup of orzo in 1 cup of water. Bring water to a boil with a tablespoon of sun dried tomato pesto, add in orzo and cook on a low boil until water is evaporated. The slaw is very good. Grate one whole apple with 3 carrots. Next spoon out a whole avocado and slice into small pieces. Mix carrot, apple and avocado then drizzle with balsamic glaze. E gave 2 forks up!

Roast vegetables. I used tomatoes, onions, red pepper, and corn in this one, but you can use any that you want. Leftovers are fine for this dish. Next get a pan hot and add a little olive oil and butter. In a small bowl pour in a cup of egg whites, add 1/8 teaspoon of garlic powder, salt, pepper, crushed red pepper, garam masala, and whatever cheese you want. I used red pepper jack. Next put it in the pan. Once the eggs have set up a bit add a little more cheese, havarti and parmasean, and put it in under a broiler for 5 minutes. Make sure your pan can go in the oven, and also that you have a mit to take it out. So yummy and flavorful.

Fillet Sandwich with Havarti Cheese and Avacado Mash


Six ounce Fillet pan seared with generous black pepper, sea salt and garlic. Pop some whole grain toast in the toaster. Smash avocado with salt and pepper and put it on one side of the toast. Once the fillet is cooked, let it set out for five minutes to rest. Slice the meat on an angle and stack onto the bread. Next add cheese, I used Havarti and your sandwich is ready to go.
