Kentucky Bourbon Pecan Chocolate Pie

Yum!
1 premade pie shell
1.5 cup semi sweet chocolate chips
1 stick of butter room temperature
3/4 cup of brown sugar
1/4 cup of regular sugar
1/4 cup bourbon
4 eggs
5 tablespoons of flour
1 teaspoon vanilla
1 cup of chopped pecans

Mix together all your ingredients except pecans and chocolate chips. Once the soft ingredients are mixed, add the nuts and chocolate.

Bake at 350 for 50 minutes to 1 and a half hours. Make sure the middle has set and I'd the edges start to look brown just put foil over the pie until its ready to come out.

Serve warm with ice cream or chilled!

Chicken Tinga Gorditas and Tacos

Tinga tacos are probably my favorite taco of all time. That says a lot considering I love tacos.

Here is a recipe I have pieced together for a delish Tinga.

1 Onion
1 Can adobo sauce
1 can plum tomatoes
2 cans chicken broth
1 TBS of cumin seeds
1 TBS of Mexican oregano
2 TBS fresh garlic
2 packages of chicken breasts

Start by cooking the onions in a large pan until semi translucent. Next add all the rest of the ingredients and bring to a boil. Once boiled quickly turn to low heat and slow cook for 2 hours or until chicken is super tender. You could do this in a crock pot too. Take out all the chicken and put on the side to cool. Bring the pot back up to a higher heat and let it reduce by at least half or to a consistency that you think would make a good sauce. Once you have reached this state you can purée all the ingredients with a hand blender or in a cuisinart. shred chicken and put back in the sauce for about 15 minutes.

Serve in tacos, gorditas, tosdas, or anything you want.

Ps-- I know gorditas are to be cut in half and filled, but I'm abnormal and like them this way!
