Sea Bass on Cabbage with Cilantro Dill Sauce



In a pan sautee chopped cabbage with a pat of butter, a little olive oil, salt pepper and lemon grass. Once Cabbage is tender put aside. Next put in a fillet of Sea Bass - I lightly salt and peppered each side. Sear one side then flip and cover the pan for about 10 minutes. The cooking time depends on how big the fillet is, I had my heat on medium high. When the fish is done take out and in the same pan pour 1/4 a cup of cream, add a pat of butter, salt, pepper, 1 teaspoon of fresh garlic, 3 tablespoons fresh minced cilantro, 2 tablespoons of dill-- let cook for 5 minutes then pour over the fish. I also served sweet potatoes. This is an easy one, just bake a sweet potato, once it is done take it out of the skin and mash it with salt, cinnamon and honey to taste.

Peal and devein a pound of medium sized shrimp. In a pan sautée 1/2 a red onion and one yellow bell pepper in olive oil. Once vegetables are translucent add in 1 heaping tablespoon of sun dried tomato pesto and 1 teaspoon of fresh garlic. Add in shrimp and 3/4 to 1 cup of any jarred tomato sauce ( I used organic). When the shrimp have curled they are done ad 1 tablespoon of fresh chopped basil, 1/4 a cup of cream, and a pinch of salt and pepper to finish the sauce. For the cauliflower simply boil in water until tender drain and top with Mahon or any hard cheese. You can break up the cauliflower in your plate in place of a pasta.

This may not be the prettiest picture but these were some great eggs. Sautee red peppers and onions in olive oil Once done put on the side. In the same pan cook eggs until desired, when they reach the done-ness you want put the vegetables back on the top. Add White cheddar cheese then salt and pepper and serve on your favorite toast.

Put a sweet potato in the oven until soft. Take out peal and add honey, cinnamon, and a dash of salt then roughly mash. Generously pepper a fillet and add some garlic powder. In a pan sear fillet until desired tenderness. Take the fillet out and in the same pan put in Madeira wine, 1/8 teaspoon of rosemary, and reduce by half with 1/8 teaspoon of garlic. To finish sauce add a pat of butter. Pour over steak and Sweet potato mash.

Egg White, Vegetable and Cheese Quiche




I got a super Easy crust Recipe off Cooks.Com. It called for 1 1/2 cups of flower, 1/4 cup of oil (I used half butter half oil), a teaspoon of salt, and 1/4 cup of milk. Mix in pie plate. Press dough out and up side of plate, shape over rim, with water around edge to help adhere. Bake in 350 degree oven until golden brown. For the egg mixture I put in 6 eggs whites, 1 cup shredded cheese, salt. pepper, 1/4 cup tomato sauce, 1/4 cup cream, Corn, Asparagus, Shallots, Red Bell Pepper ( (all vegetables were sauteed in olive oil) and tomato for garnish. I mixed all the above ingredients then put in the pie shell and topped off with the tomato and some of the sauteed bell pepper for garnish. Pop in the oven for 35 minutes on 350 and your done~

The Fair!



I had more fair but I deleted them-- this was what was left of the funnel cake.


When I dont have time - or feel like cooking I make a pizza. I brown tortillas under the broiler. Once both sides are crisp I take them out and add tomato sauce, cheese and whatever toppings I have handy. Stick it back in the oven on 400 bake for about 13 minutes or until cheese is browned. Done-- so easy~
