Pan Seared Lamb Chops
You need about 3 chops per person-- or 2 for light eaters and 4 - 5 for boys
Sprinkle lamb chops with good dried italian seasnoning on both sides-- You can be pretty liberal.
Next add fresh crack pepper to both sides
Add a little salt to both sides as well
Warm up pan with olive oil
Once pan is warm add lamb chops and cook for 5 minutes on each side. You can do 5 and a half if you like them a little more done.
Take chops out and place on the side.
Add two shallots or half a yellow onion sliced thin and cook down for 3 minutes
De glaze pan with 1/4 cup of balsamic vinegar. Once that has basically all evaporated add 1/2 to 1 cup of beef stock, and 1/2 a tablespoon of fresh garlic (I use jarred) and cook down until sauce is thick. Once sauce is thickened add in a pat of butter.
Pour over chops and send me a nice thank you note!
