Seared Salmon and Cheese Polenta
Polenta 1/2 cup cornmeal 2 cups chicken broth 1 Tbsp butter 1/2 cup salsa 3 slices havarti cheese Sea Salt to taste 1/2 tbsp garlic Bring chicken broth and cornmeal to a boil. Simmer for 20 minutes stirring occasionally. Once polenta is done add salt, butter, garlic, salsa and cheese. Stir for a minute and you are done. Seared Salmon Salmon Fillets Garlic powder Garam masala Salt Pepper Oregano Dill Lightly sprinkle each spice onto the salmon except dill onto the fish. About 1/8 teaspoon of each. Next sear salmon in a pan that has been heated with olive oil. Cook about 5 minutes on each side or until done. Lastly, sprinkle with dill. Serve over polenta. Enjoy! S

Chicken Tortilla Soup
1 package of chicken on the bone
4 cans chicken broth
1 can crushed tomato
3 cloves crushed garlic
1/2 teaspoon cumin
Black pepper
Red pepper to taste
One onion chopped
Two carrots
Sautée onion, carrot, garlic and chicken until brown.
Next pour in chicken broth. Add cumin, pepper, tomato, red pepper and let simmer for 40 minutes.
Take chicken out and let cool.
Blend the broth slightly for a few seconds to thicken. Shred and put back into the pot.
Serve with garnish of lime, cilantro, tortilla chips, Avocado, Monterrey Cheese and a dollop of creme if you like.
